We've had some really lovely weather. The middle of the week was very springlike and the last two days have been in the high 80s. The dogwoods and azaleas are putting on a fine show. I love the jellybean colors of azaleas.
I roasted a nice chicken tonight. I keep it simple. I put a head of garlic, separated into cloves, into the cavity, salt and pepper the bird, and oil the pan and chicken. 15-20 minutes per pound in a 350 degree oven.
My BIL taught me how to dismember a hicken and so I packaged it up. It will provide a good seven meals. Dinner tonight was a chicken leg and thigh and broccoli.
