I purchased some bison meat at the farmers market. I tried cooking it very simply - 5 minutes on a side after coating it with olive oil. That made it a little rare for my taste. I sliced the leftovers and gave those another minute a side in butter. Turned out very nicely. I sauteed some mushrooms and onions and made a salad from the butter lettuce to put alongside.

The verdict: I'd buy it again. It tasted nicely steaky. The lower fat content does mean it has to be watched closely but the higher iron content makes it worthwhile.
