Fiddling around with cooking again
Aug. 18th, 2010 10:04 pmAnd why did I suddenly obsess with the perfect hardcooked egg? I tried several different techniques to get rid of that nasty gray-green edge to the yolk but yet have the white not too rubbery. Best method so far is to bring a pot of water to the boil, lower the eggs *gently* into the water, turn it down to a gentle simmer and give it ten minutes (but do not cover pot!). Tasty!
Also fiddling with my corn chowder recipe. I promised it for Friday evening for a friend gathering. Maybe a little more paprika? Maybe might have turkey bacon but finally decided only as an optional garnish. Chowder is actually vegetarian otherwise. But fresh corn is essential.
Made really nice red beans and rice for my dinners. Nom! Oh and I made candied orange peel! Really really nice!
