I must be in one of the few places in the country that DIDN'T get smothered in snow this weekend. Here's hoping all of you are well and coping :)

A belated happy 90th birthday to Arthur C. Clarke, one of my alltime favorite science fiction writers. Childhood's End is sheer genius.

And Happy Beethoven's Birthday as well!

I was reminded of a cake I often make around the holiday time. Originally I made it with clementines, but most kinds of citrus taste good. I made it once with lemons and limes and that was good. It can't be served to Rodney McKay but it's a good breakfast cake or dessert depending on how you dress it up. The original recipe came from Nigella. It's a good cake for diabetics or the wheat intolerant too.

1 lb citrus (oranges, lemons, clementines)
6 eggs
1 cup plus 2 Tbs sugar (I often make it with 1 cup of Splenda instead)
2 1/3 cups ground almonds (I've also used walnuts with great success)
1 heaping tsp baking powder.

Boil the tangerines for two hours - no peeling, cutting or poking needed. Cut them open, remove seeds, and pulse or blender them into a nice mash.
Preheat oven to 375 degrees
Butter or PAM an 8 1/2 inch baking pan.
Beat the rest of the ingredients together and add the mash.
Bake for an hour. Let it cool on a rack for ten minutes.

I usually just take a rolling pin to the nuts but you could pulse or blender them. They don't have to be particularly finely powdered.

I top it with apricot preserves or whipped cream or chocolate syrup or more fruit slices. It's good plain for breakfast too.
