I need to stash this recipe here to remind me to try it.
Chicken and Lentils (or just leave out the chicken)
1 (8 oz) package of baby carrots. (or if you have a volunteer squash hanging around, chunk that up)
1 1/2 cups lentils, dry (uncooked)
1 1/2 pounds frozen chicken breast tenders (or whatever - it falls apart in the end, so use what ya got)
2 T. minced garlic. (I must admit to using the jarred stuff for this since I don't like to mince garlic before heading to work).
3/4 t. salt
3/4 t. ground tumeric
1/2 t. ground red pepper
1/2 t. cinnamon
2 (14 oz) cans chicken or vegetable broth.
Place all ingredients, in order listed, in a 4-5 quart crock pot. Cover and cook on high setting 5 hours. Or - cover and cook on high 1 hour, reduce to low and cook 7 hours.
NOTE: I have a 6-quart crock pot now (after the dogs killed my old one) and the last time I made this, it was a little dry - so if you have a larger crock pot, just double the recipe.
ALSO: I have just let this run all day on low or medium and it turns out fine, so make the times fit your schedule, it still works.
